Bikini

Serves 10 people

For the Clementine Cordial (makes 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar

For the Cocktail (makes 850ml, serving 10)

400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
A few cranberries, to garnish
Mandarin essential oil, for finishing

Directions

Making the Cordial: Put the listed ingredients inside a pot, heat until it reaches a gentle boil, stirring so the sugar melts. Then, take off the heat and leave to reach room temperature completely. Pour to a sealable bottle, close it and store in the fridge, where it will keep for around a month.

For the Premix: Pour the specified liquid ingredients into a sizeable container, leave to sit for one hour, then strain best through cheesecloth, so it's perfectly clear.

To serve: Add 85ml from the batch mix into your stirring glass filled with ice, and agitate lightly for about 60 seconds to cool it down. Pour into a chilled martini glass or equivalent, top with some cranberries adding the final touch with a light spray with the mandarin essence over the drink.
